VEGETABLE POHA

Welcome to my cookbook Cookerypoint - Ila's Kitchen. Today my recipe is Vegetable Poha.. This is very easy and yummy recipe. This is a very quick and healthy breakfast. This recipe is from South Indian Cuisine which sounds delicious. The main ingredient is Poha thick variety rice flakes. The own combination of veggies can be used. Shall we move on to our recipe....



VEGETABLE POHA
Ingredients:

Poha - 1 cup (thick Variety)
Onion - 1 (Medium finely chopped)
Carrot - 1/4 cup(finely chopped)
Beans - 1/4 cup (finely chopped)
Turmeric powder - 1/4 tspn
Green chilli - 2 (Slit vertically)
Mustard - 1 tspn
Channa dal  2 tspn
Peanuts  1/4 cup
Lemon juice - 2 tspn
Curry leaf - 1 tbspn
Coriander leaves - 1 tbspn
Salt as required
Oil as required
water as required

Preparation:

Soak poha in cold water for 10 minutes and drain the water.
Heat oil in a pan,add mustard,peanuts,channa dal and onion and fry well.
Add green chilli,curryleaves and turmeric powder.
Now add carrot and beans,and cook it until tender by adding water.
Add salt and poha,give a good mix till it combines well.
Add coriander leaves and lemon juice and mix well.
Now, yummy vegetable poha is ready to serve.

Serving Suggestion:

This yummy vegetable poha can be served for breakfast with flavoured raitha.
