Cashew nuts - 10 no<br />
Cumin seeds - little<br />
Mustard - little<br />
Ginger - 1/2 inch (Finely Chopped)<br />
Curry leaves - 2 sprig<br />
Turmeric powder - 1 tspn<br />
Baking powder - 1/2 tspn<br />
Chilli powder - 1 tspn<br />
Oil - 1 tspn<br />
Salt as required<br />
Water as required<br />

<br />
Boil the patatoes with salt and smash in to medium chunks.<br />
Heat the oil in the pan and add mustard and cumin seeds.<br />
After it splutters, add cashew nuts,greenchilli,curryleaves and ginger.<br />
Now add onion and fry till transulent and add turmeric powder.<br />
Its time to add boiled smashed potatoes with salt and mix well.<br />
Add little water if required to bring the consistency.<br />
Let the mixture be cool and make in to small round dumplings.<br />

Take the bowl with gramflour,baking powder,chillipowder and salt.<br />

Now dip the aloo dumpling in the batter and fry in the hot oil.<br />
Let it fry all around till it becomes reddish brown.<br />
Now, Aloo Bonda is ready to serve.<br />

Tamrind juice - 2 cups<br />
Sesame oil - 2 tbspn<br />
Onion - 1 no(finely chopped)<br />
Garlic - 3 pods<br />
Turmeric powder - 1/4 tspn<br />
Sambhar powder - 2 tbspn<br />
Coriander powder- 1 tbspn<br />

Cumin seed - 1 tspn<br />
Methi seed - 1/2 tspn<br />

Soak lemon size of tamrind in warm water and extract the juice from it.<br />
Heat Sesame oil in a pan, add mustard,cumin and methi seeds.<br />
Now add Sundakkai vathal and hing. Fry for few minutes.<br />
Its time to add Onion,curryleaves,garlic and fry till onion become transulent.<br />
Now, add turmeric powder, sambhar powder and coriander powder.<br />
Fry for few minutes and add tamrind juice to it.<br />
Add salt to it and let it boil.<br />
Boil until the gravy becomes thick.(May be for 10 minutes).<br />
Add sugar to increase the flavour and taste of gravy.<br />
Now, VathaKulambu is ready to serve.<br />

Food colour (Saffron) - pinch (optional)<br />

Heat ghee (or) butter in a pan and add cashews,raisins and almonds.<br />
Put it in low flame and fry for few seconds and add semolina to it.<br />
Roast sooji in low flame until it becomes light brown colour.<br />
Stir sooji continously to avoid lumps which will take five minutes.<br />
Now, add sugar to roasted semolina and add water immediately to it.<br />
This continous action will help to avoid lumps.<br />
Put it in high flame and stir until required (Upma) consistency.<br />
Now, add food colour dissolved in water to halwa which is optional.<br />
Its time to add sugar if extra sweet is required.<br />
Add pinch of salt and put it in low flame and cover with lid.<br />
Remove from heat when water is absorbed well.<br />
Now, Rava kesari is ready to serve.<br />

Urad dal - 1 cup<br />
Onion - 1 (Chopped finely)<br />
Corainder leaves -little (Chopped)<br />
Curry leaves - little (Chopped)<br />
Cumin seeds - little<br />
Hing - pinch<br />
Pepper Powder or corns - little<br />

Soak Urad dal for atleast six hours.<br />
Grind dal in to fine paste with out adding water.<br />
Sprinkle little water if required while grinding.<br />
Beat the dough with hands for aeriation if batter is grinded in mixie.<br />
Now add hing, Peppercorns, curryleaves, salt and cumin.<br />
Take some pinch of batter and drop in to water. It should float in water.<br />
This should be right consistency for making vada.<br />
Now, add chopped coriander leaves and onion and mix well.<br />
Dip hands in water and make small ball with little hole in it.<br />
Drop it in oil and deep fry the vada.<br />
Now, yummy Medu Vada is ready to serve.<br />

Almonds - little<br />
Ghee - 3 tbspn<br />

Roast vermicelli with little ghee until it become golden brown.<br />
Heat ghee in a wide pan and add cashewnuts,almonds and pistachio.<br />
Now,add raisin and fry till it puff up like balloons.<br />
Its time to add milk and let it boil and add cardomom powder.<br />
Add sugar to the milk and stir it frequently.<br />
When milk boils well add roasted vermicelli.<br />
Let it cook until vermicelli is soft and tender to eat.<br />
Remove from heat when vermicelli is cooked.<br />
Now Vermicelli Kheer is ready to serve.<br />

Red chilli - 1 no<br />
Olive oil - 2 tspn<br />
Salt as required<br />

Heat the vegetable stock and add carrot and potatoes.<br />
Add chilli flakes and let it boil.<br />
Bring it to boil and simmer it for 10 minutes.<br />
Drain the vegetable and reserve the stock.<br />
Heat olive oil in pan and fry vegetables for 5 minutes.<br />
Pour back the reserved stock to vegetables and add tomatoes.<br />
Boil it for 5 minutes and add salt and pepper.<br />
Cool the mixture and blend it well for smooth paste.<br />
Serve the soup with salad onions,salt and pepper.<br />

Add salad onion and pepper powder to vegetable stock.<br />
Put on heat and bring the vegetable stock to boil.<br />
Remove froth if formed and let vegetables cooked.<br />
Dissolve cornflour in water and add little by little to soup.<br />
Let it boil for few minutes and serve with salad onion.<br />

Its yummy Soup week and my cup is Corn and Veggie Soup for Blogging Marathon. It is a popular and easy soup which can be made very quick. I used most common vegetables and your own combinations are always welcome. Boil and blend sweet corn if fresh and frozen ones are used. Lets go to our yummy soup ....<br />

<br />
Sweet corn paste - 1 can (canned or frozen)<br />
Vegetable stock - 3 cups<br />
Carrot - 1 no (chopped finely)<br />
Baby corn - 5 no ( chopped circle)<br />
Beans - 10 no (Chopped finely)<br />
Celery - 1/4 cup ( chopped finely)<br />
Corn flour - 1 tspn<br />
Salad Onion - 2 stem<br />
Salt as required<br />
Pepper powder as required<br />
<br />
<b><i><u><span class="Apple-style-span" style="color: #660000; font-family: Verdana, sans-serif;">Preparation:</span></u></i></b><br />
<br />
Take vegetable stock in a bowl, add carrot and beans.<br />
Now add baby corns, beans and celery to stock.<br />
Its time to add Sweet corn paste to stock.<br />
Boil and blend sweet corn if fresh corns are used.<br />
Put on heat and bring to boil and add little salt and pepper.<br />
Remove froth if formed and let it boil for 5 minutes<br />
Now,dissolve corn flour with little water and add slowly to soup.<br />
Let it boil for few minutes and remove from heat.<br />
Serve the soup with salad onions on top.<br />

This is my second day in Marathon originated by <b>Srivalli</b>. It is a very healthy and yummy combination. The main ingredients are carrot and coriander. The different combination of veggies can be used here to make soup but the combo taste should go well. The soup is little bit sweet as the carrots are sweet. <br />
Carrot - 1 no (Peeled and Grated)<br />
Yellow lentil - 1/2 cup<br />
Vegetable Stock - 2 cups<br />
Cumin seeds - 2 tspn<br />
Red Chilli - 2 no<br />
Yogurt - 1 tbspn<br />
Olive oil - 2 tspn<br />
Coriander leaves - To garnish<br />
<br />
<b><i><u><span class="Apple-style-span" style="color: #660000; font-family: Verdana, sans-serif;">Preparation:</span></u></i></b><br />
<br />
Heat the pan and dry fry the cumin seed and redchilli for a minute.<br />
Reserve some tadka for garnishing at the end.<br />
Now add olive oil to the same pan with cumin seed and chilli.<br />
Add grated carrot when the oil become hot.<br />
Fry for few minutes and add yellow lentils to it.<br />
Now add vegetable stock until lentil immerse or according to your consistency.<br />
Bring to boil and simmer for 15 minutes until dal is cooked.<br />
Alternatively,dal can be cooked before and simmer for 5 minutes.<br />
Cool the dal mixture and blend it well until smooth.<br />
Now add reserved tadka,corianderleaves and yogurt for garnishing.<br />
Carrot and Lentil Soup is ready to serve.<br />

</div><div>Soak Toordal,Channa dal,Raw rice,Cumin seed for 30 minutes.</div><div>Grind soaked items with greenchilli and coconut as a fine paste.</div><div>Heat oil in a pan and add chopped okras and shallow fry it well with salt.</div><div>Take a bowl add one cup of water with yogurt and whisk well with salt.</div><div>Heat the pan, add buttermilk in low heat, and add turmeric powder.</div><div>Now add curry leaves,and ground paste to buttermilk.</div><div>Its time to add cooked okras and salt to curry.</div><div>Add water as required depending up on consistency desired.</div><div>Cook it in low medium flame for almost 10 minutes until raw aroma leaves.</div><div>Now add tadka(Mustard and red chilly) to mooru curry .</div><div>Mooru curry is ready to serve.</div></div><div><br />

Belated Ugadi Wishes to all :) Today my recipe is fabulous and famous street food and starters... Yup it is Chilli Gobi. What guys? Feeling tempting :) Hmmm me too yummy yummy :) The main ingredient is Cauliflower and it is a famous street food available all over India .Chilli gobi is served as starters in restaurants. The measurements of ingredients proposed here is for some 10 - 15 medium sized florets. The cornflour and maida ratio is 1: 0.5 . So, lets go to our recipe :)<br />

Cornflour - 2 tbspn<br />
Chilli powder - 1 tspn<br />
Garam masala - 1/2 tspn<br />
Cumin powder - 1/2 tspn<br />
Ginger garlic paste - 1 tbspn<br />
Soya sauce - 1 tspn<br />
Lemon juice - 1 tspn<br />
Egg - 1 no<br />
Pepper powder as required<br />
Salt as required<br />

<br />
Wash cauliflower florets and soak it in hot water.<br />
Add turmeric powder as well and soak for 15 minutes.<br />
Wash the florets and shallow fry it for 10 minutes.<br />
Take a bowl and prepare the paste for frying.<br />
Add cornflour and maida (ratio 1:0.5) and mix well.<br />
Now add chillipowder,garam masala,cumin powder and ginger garlic paste.<br />
Mix well and add soya sauce and egg, beat it well.<br />
Add salt and pepper and mix the batter with lemonjuice.<br />
Drop all florets in mixed batter and rest it for 15 minutes.<br />
Deep fry the florets and chilli gobi is ready to serve.<br />

Today my recipe is Beetroot Chutney. Hope this is a familiar side dish of <b>South Indian Cuisine</b>. My mom used to make this chutney in my childhood days. She made me to eat beetroots in chutney form. I got used to this chutney later on. This Chutney is mandatory twice a week till now .:) My mom make this chutney often as this is very healthy recipe. Beetroot - 2 no ( peeled and grated)<br />
Tamrind - little ball size<br />
Channa dal - 1 tspn<br />
Urad dal - 1 tspn<br />
Red chillies - 2 no<br />
Curryleaves - little<br />
Coconut - 3 tbspn (Optional)<br />
Oil as requited<br />
Salt as required<br />

Heat oil in a pan and add channadal,urad dal and redchillies.<br />
Now add curryleaves and grated beetroot.<br />
Fry for few seconds and add grated coconut.(Coconut is optional)<br />
Now add tamrind,salt and fry well.<br />
Cook well until beetroot is done.<br />
Cool the mixture and blend it to nice paste with water.<br />
Add tadka (Mustard,urad dal,Curryleaves ) to beetroot chutney.<br />
Now,yummy beetroot chutney is ready to serve.<br />

Basmathi Rice - 1 cup<br />
Onion - 1 (Large, Vertically chopped)<br />
Ginger garlic paste - 1 tbspn<br />
Pepper corns - 6 no (Crushed,add more to your spice taste)<br />
Hot water - 1 1/2 cups<br />
Ghee - 3 tbspn<br />
Oil - 3 tbspn<br />
Cliantro - little<br />
Fried Onion asrequired<br />
Fried Cashews as required<br />
Fried Raisins as required<br />
Cloves - 2 no<br />
Cinnamon - 1 inch stick<br />
Bay leaf - 1 no<br />
Fennel - 1 tspn<br />

<b><i><u><span class="Apple-style-span" style="color: #660000; font-family: Verdana, sans-serif;">Preparation:</span></u></i></b><br />
<br />
Soak rice for 20 minutes and drain it.<br />
Heat ghee and oil in a wide pan, and add cloves,cinnamon,bayleaf and fennel.<br />
Now,add onion and fry well till it become transulent.<br />
Add crushed pepper corns and fry for few minutes.<br />
Green chillies can also be used instead of pepper corns.<br />
Add ginger garlic paste and fry till raw aroma leaves.<br />
Now,add drained rice and fry it till the colour changes.<br />
Stir the rice continously with gentle for about 3 minutes.<br />
Add hot water and let it boil and add salt.<br />
Cover the pan when water boils and keep in low flame for 10 minutes.<br />
Check if water is absorbed and switch off flame.<br />
Let it be for 10 minutes and the open the pan.<br />
Fluff rice gently with fork and garnish it.<br />
Garnish with coriander leaves,fried cashews,raisins and onion.<br />
Add pinch of garam masala to enrich the taste and flavor.<br />

</div><div>Boil milk in non stick wide pan in medium high flame.</div><div>Stir frequently and let it boil for 8 minutes.</div><div>Now, add water to lemonjuice and mix well.</div><div>Add lemon water juice to milk when it boils well.</div><div>Now, fat separates from the milk and let it boil for 3 minutes.</div><div>Place the cheese cloth in strainer and drain out the paneer.</div><div>Run cold water in to paneer to remove the flavour of lemon.</div><div>Then squeeze out water from paneer gently.</div><div>Hang out the paneer for about half an hour to one hour.</div><div>Now,our paneer is ready to go.</div><div><br />

</div><div>This is most important step in this process.</div><div>Knead the paneer well with the palm.</div><div>Rub it well and make it as soft dough.</div><div>The paneer has to be really soft. so knead it really well.</div><div>Make in to equal portions and roll in to balls.</div><div>The paneer balls may broken if it is not soft or not kneaded well.</div><div>So, do knead gently to get smooth dough of paneer.</div><div>Now, our paneer balls are ready to do rasagulla.</div><div><br />

</div><div>Heat the water in a wide pan and let it boil well.</div><div>Add sugar when water boils and let it dissolve.</div><div>Now add paneer balls in the sugar syrup and cover the pan.</div><div>Let it be for 10 minutes in medium flame.</div><div>Open the pan and turn the paneer balls to other side and cover it.</div><div>Let it be for 15 minutes and then remove from heat.</div><div>Just let it for 10 minutes and then open the pan.</div><div>Make sure to use wide pan coz paneer balls will become double in size.</div><div>Just check the texture and size of balls and let it cool.</div><div>Now, our rasagulla is ready to serve.</div><div><br />

Fry sooji with ghee or oil till little brown.<br />

Add ginger,curryleaves and turmeric powder and fry well.<br />
Its time to add grated carrot and chickpeas and mix well.<br />
Now add water with salt and let it boil in medium low flame.<br />
Add sooji when water boils and stir it continously.<br />
Cook it for 5 minutes and mix well without any lumps.<br />
Now add lemonjuice and coriander leaves and mix well.<br />
Let it cool and sooji pulihora is ready to serve.<br />

I want to give a simple,yummy and quick salad. Here is Carrot salad. It is wonderful crunchy salad with nutty flavored and yummy taste. It is very refreshing and suitable for very light snack in evening. I used almonds here but your own choice of nuts can be used. So lets move on to our salad...<br />

<br />
Carrots - 4 no (Grated)<br />
Coriander leaves - 2 tbspn (Finely chopped)<br />
Fresh red chilli - 1 no (Finely chopped)<br />
Flaked almonds - 2 tbspn<br />
Salad leaves - 1 bunch<br />
<br />
<span class="Apple-style-span" style="color: #660000; font-family: Verdana, sans-serif;"><b><i><u>For dressing:</u></i></b></span><br />
<br />
Extra Virgin Olive Oil - 3 tbspn<br />
Lemon juice - 1/4 (Squeeze juice)<br />
Fresh ginger - 2 inch (Grated finely)<br />
salt as required<br />
Pepper as required<br />
<br />
<span class="Apple-style-span" style="color: #660000; font-family: Verdana, sans-serif;"><b><i><u>Preparation:</u></i></b></span><br />
<br />
Prepare dressing by gently whisking lemon juice with olive oil.<br />
Add grated ginger,salt,pepper and mix well and dressing is ready.<br />
Grate the carrot in processor or grater.<br />
Now add redchilli and coriander leaves and mix well.<br />
Now pour the dressing and mix well.<br />
Dry roast the flaked almonds and add to salad.<br />
Gently mix the salad and serve with salad leaves.<br />
