Welcome to my cookbook Cookerypoint - Ila's Kitchen. Today my salad for marathon is Tangy Cucumber Salad. I did cucumber salad already but this one is different with tangy dressing. This dressing gives tangy flavour and taste to the salad with crunchy bite of fresh ginger. It is very refreshing and exotic type of salad which is my favorite also... So guys try it and have fun :) Lets go to our recipe ...
Ingredients:
Cucumber - 1 no (Peeled)
Corriander stalks - 2 tbspn (Chopped finely)
Corriander leaves - 2 tbspn (Chopped finely)
Fresh red chilli - 1/2 no (Chopped finely)
For Dressing:
Fresh ginger - 2 inch (Peeled and grated)
Lemon - 1/2 (Squeeze into juice)
Soy sauce - 1 tbspn
Sesame oil - 1 tspn
Extra Virgin Olive oil - 3 tbspn
Preparation:
Take a salad platter and grate the peeled ginger in it.
Then add soy sauce,oilve oil and mix well.
Now add sesame oil and lemon juice and mix well.
Check the seasoning and now our dressing is ready.
Peel the cucumber in to ribbons in salad platter above the dressing.
Add corriander stalks and leaves with red chilli.
Pour some dressing over the cucumber and let it be.(Stock dressing before peeling cucumber)
Mix the salad while serving and our tangy cucumber salad is ready.
Serving Suggestion:
This refreshing tangy cucumber salad can be served with breakfast.
