Welcome to my cookbook Cookerypoint - Ila's Kitchen. It is my 3rd day in Blogging Marathon. I want to do my favorite salad which is yummy and healthy. Yup Greek Potato Salad... I dono why the name is so but I hope this salad is from Greek. This is a stomach filling salad which could be prepared very easily. I am not sure about the replacement of other veggies because salad potatoes gives very unique taste and dressing gives unique flavour to the salad... lets go to our salad....
Ingredients:
Salad Baby Potatoes - 400 g
Salad Onion - 3 no(Chopped finely)
Cherry tomatoes - 5 no(Diced)
Chickpeas - 1/2 cup ( Boiled)
Black Olives - 10 no ( chopped finely)
For Dressing:
Extra Virgin Olive oil - 2 tbspn
Lemon Zest - 1/2 tbspn(Grated)
Lemon juice - 2 tbspn
Dijon Mustard - 1 tspn
Yogurt - 2 tbspn
Salt as required
Pepper powder as required
Preparation:
Cut the potatoes in to quarter and boil until it becomes tender.
Boil the chickpeas as well or canned chickpeas can also be used.
Chop salad onion,Olives and cherry tomatoes.
Take Olive oil in a bowl and add lemon zest and juice and mix well.
Add dijon mustard and yogurt and whisk well with salt and pepper.
Now our dressing is ready to go with potatoes.
pour half of the dressing over the warm potatoes and let it cool.
Then add salad onion, cherry tomatoes and Olives to the dressed potatoes.
Toss well and add remaining dressing to salad and serve at room temperature.
Serving Suggestion:
This Greek Potato Salad can be served with breakfast. Enjoy and have fun.
