COUS COUS VEGGIE SALAD - DAY 1

Welcome to my cookbook Cookerypoint - Ila's Kitchen. I am excited to participate in Blogging Marathon for 7 days. Thanks to Srivalli for organising Group 2 in Marathon. Yes, my theme is Seven days of Salads. I selected this theme because I like salads very much. I used to try different salads which is very healthy too. So, lets have Salad week starting from today. Cous Cous Veggie Salad.....




COUS COUS VEGGIE SALAD
Ingredients:


Cous Cous - 200g
Carrot - 1 ( finely grated)
Cucumber -1 cup ( finely chopped)
Onion - 1/2 (finely chopped)
Hotwater - Till couscous immerse ( 2cups)

For Dressing:

Fresh Redchilli - 1 (chopped finely)
Mint leaves - 1/4 bunch (Chopped finely)
Lemon - 1 (Squeeze juice)
Extra Virgin Olive oil - 4 tbspn
Cherry Tomatoes - 4 no
Salt as required
pepper powder - 1tspn ( Optional)

Preparation:

Take Cous Cous in a bowl,add pinch of salt and boiling water.
Cover the Cous Cous with boiling water until it immerse.
Cover the bowl with plate and let it be for 20 minutes.
Seperate the grain with fork, so it becomes pluffy.
Now Cous Cous is ready and add carrot, cucumber and onion.
Mix well and add mint, red chilli and cherry tomatoes.
Its time to add Olive oil and lemonjuice and mix well.
Now check the seasoning,and add salt to it.
Pepper powder can also be used to enrich the spiciness.
Hmmm yummy Cous Cous Veggie Salad is ready to serve.

I sprinkled out the ingredients above the salad to show that are used in Cous Cous Salad.

Serving Suggestion:

Cous Cous Veggie Salad can be made with your own combination of veggies . It can be served for evening snacks and breakfast.

I love couscous as it is so easy to cook (or make since technically there is no cooking involved.) Your salad looks delicious.
